Chole Kulche Recipe
Chole Kulche is one of North India’s most beloved comfort foods, combining soft, fluffy kulchas with a rich, spiced chickpea curry. It’s a hearty, flavorful dish perfect for any time of the day.
ЁЯСЙ Ingredients
For boiling chole: -

1.5 cups chickpeas (soaked overnight)
-
1 tea bag or 1 tsp tea leaves tied in cloth (for colour, optional)
-
1 tsp salt
-
1 tsp baking soda (optional, softens chole)
-
4 cups water
For Kulcha : -
For masala: -
-
2 tbsp oil or ghee
-
1 large onion, finely chopped
-
2 tomatoes, pureed
-
1 tbsp ginger-garlic paste
-
2 green chilies, slit
-
1 tsp cumin seeds
-
1 bay leaf
-
1 tsp turmeric
-
1.5 tsp red chili powder
-
1 tsp coriander powder
-
1 tsp jeera powder
-
1 tsp amchur (dry mango powder)
-
1 tsp garam masala
-
1 tsp chole masala (optional but recommended)
-
Salt to taste
-
Fresh coriander, chopped
-
1 tbsp butter (optional, dhaba-style)
ЁЯСЙ Instructions
For chole : -
Step 1 — Boil the Chole

Drain soaked chickpeas.
-
Add them to a pressure cooker with water, salt, tea bag, and baking soda.
-
Pressure cook for 6–7 whistles (or until soft).
-
Remove the tea bag. Keep the boiled water for gravy.
Step 2 — Prepare the Masala

Heat oil in a pan.
-
Add cumin seeds, bay leaf → let splutter.
-
Add onions → saut├й until golden.
-
Add ginger-garlic paste → cook until raw smell goes.
-
Add tomato puree + chilies.
-
Add turmeric, chili powder, coriander powder, jeera powder → cook until oil separates.
Step 3 — Add Boiled Chole

Add boiled chickpeas + some of the boiled water.
-
Mash a few chole with the back of the spoon to thicken gravy.
-
Add amchur, chole masala, garam masala, and salt.
-
Simmer 15–20 min on medium heat.

Add butter + coriander to finish.
Your Chole is ready!
For Kulcha : -
Step 1 — Make the Dough

Mix flour, salt, sugar, baking powder, and baking soda.
-
Add curd + oil → mix.
-
Add warm water gradually → knead a soft dough.
-
Cover and rest 1 hour.
Step 2 — Shape & Cook Kulcha
-
Pinch a dough ball.
-
Roll it oval/round.
-
Sprinkle kalonji + coriander on top → roll lightly.
-
Cook on hot tawa:
-
Place kulcha seed-side up
-
Flip when bubbles appear
-
Cook both sides until golden
-

Brush with butter.
