👉 Ingredients for Pav Bhaji
For the Vegetable Bhaji:

Potatoes – 3 medium (boiled and mashed)

Cauliflower – 1 cup (finely chopped)

Green peas – ½ cup (boiled)

Capsicum (bell pepper) – 1 (finely chopped)

Tomatoes – 3 (finely chopped)

Onions – 2 (finely chopped)

Ginger-garlic paste – 1 tbsp
-
Green chili – 1 (finely chopped)
Spices:

Pav Bhaji Masala – 2 tbsp

Red chili powder – 1 tsp
-
Turmeric powder – ½ tsp
-
Salt – to taste
-
Butter – 2–3 tbsp
-
Lemon – 1
-
Fresh coriander – for garnish
For the Pav:

Pav (Indian bread rolls) – 6 to 8

Butter – for toasting
How to Make Pav Bhaji (Step-by-Step):
Step 1: Boil and Mash the Vegetables

Wash and boil the potatoes, cauliflower, and green peas in a pressure cooker for 2 whistles.

Once cooked, mash them thoroughly using a potato masher.
Step 2: Prepare the Bhaji (Vegetable Mix)

Heat butter in a large pan or kadai.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and green chili. Sauté for 1 minute.

Add chopped tomatoes and cook until soft and mushy.

Mix in the chopped capsicum and sauté for 2–3 minutes.

Now add pav bhaji masala, red chili powder, turmeric, and salt.

Add the mashed vegetables, mix well, and mash further in the pan.

Cook for 5–10 minutes, adding water as needed to adjust the consistency.
Step 3: Toast the Pav

Heat a tawa or pan.
